Good Quality Rigatoni. A slightly bigger pasta to catch more vegan cheese sauce.

Add boiling water or add pasta to a pan of boiling water. Cook till its al dente. Meanwhile….

Add a good amount of Nutritional Yeast 80 – 100g to a roux and gradually work in unsweetened soya milk. Season to taste.

A pan full of vegan cheesey sauce. Stir it a lot to get the sauce really creamy and smooth. Sometimes I cheat and use a hand held whisk.

Mix the sauce with the cooked pasta in a baking dish. Put in the oven at 180 degrees / gas mark 6 for 35 minutes.

A bit crispy on the ends, just how I like it. The vegan Mac & Cheese is ready!

Frying some spicy seitan chorizo to go on top. (A recipe for another day. Its easy to make and uses lashings of paprika and nutritional yeast)
